Super Easy Vegan Pancakes



My standard breakfast is toast with vegemite and avocado but when I have a little more time I love pancakes. This recipe is super easy to make and can be stored in the fridge, I like the make fiveish and then save the rest. It also helps that it takes less than five minutes to whip up. I've played around with other recipes that include flax eggs and copious amounts of oil but this one is by far my favourite!

Ingredients
> 1 1/4 cups of your choice of flour (I use wholemeal)
> 2 teaspons of baking powder
> 1/2 teaspoon salt
> 1 1/4 cups your choice of milk alternative (I like either almond or oat)
> 1 tablespoon maple syrup
> 1/2 teaspoon vanilla extract (vanilla sugar and powder both work)

> plus your choice of toppings 

Method
1. mix the dry ingredients - flour, baking powder and salt - in a big bowl
2. add in the wet ingredients - milk alternative, maple syrup and vanilla extract - and mix well
3. warm up your pan and melt some butter - here you can also use a cooking spray
4. pour your batter into the pan, wait for the edges to darken and then flip (if you like them a little darker you can either flip them back over again or leave them a little bit longer before flipping)
5. serve them up with your choice of toppings and enjoy!
