Good Eats // Orange and Chia Seed Muffins

I'm really into muffins, they're savoury cupcakes that can be eaten whenever you choose - and in large amounts.

Instead of picking up a box mix on most recent trip to Coles I decided to make a batch from scratch. 
Orange and poppy seed is always my favourite muffin, as I was trying to work mainly with what I had in my cupboard I've opted for orange and chia seed muffins. 


My recipe is quite basic but has been modified to be slightly healthier, but you can always use regular flour and sugar of course.

Ingredients
- 2 Oranges (tops removed, scored with a 3cm deep cross)
- 6 Eggs
- 250g Coconut Sugar
- 250g Almond Meal
- 3ts Baking Powder
- 2tbs soaked Chia Seeds

Method
- boil pot, place prepared oranges and simmer for 50 mins. Remove from water and puree whole orange (peel included) in a food processor until smooth
- preheat oven to 160 celcius
- in mixing bowl cream eggs and coconut sugar, mix eggs and sugar until fluffy
- stir in orange puree and soaked chia seeds
- pop mixture into muffin tray
- bake for 20 mins or until firm but still moist - I always check mine five minutes before because my oven is super fast
- leave to cool for fiveish minutes
- finally, enjoy

I store mine in an airtight container and they disappear before the end of the week!
